Copycat Pumpkin Scones

Copycat Pumpkin Scones - From Murphy Cooks! Blog

2 cups all-purpose flour
7 TBSP granulated sugar
1 TBSP baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/2 cup canned pumpkin (not pumpkin pie filling)
3 TBSP half-and-half (I used fat free)
1 large egg
6 TBSP cold butter

Plain Glaze:
1 cup plus 1 TBSP powdered sugar
3 TBSP milk (I used skim)

Spiced Icing:
1 cup plus 3 TBSP powdered sugar
2 TBSP milk (I used skim)
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
pinch ground cloves
pinch ground ginger

Preheat oven to 425 degrees.

Combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves, and ginger in a large bowl.

In a separate medium bowl, whisk together pumpkin, half-and-half, and egg.

Cut butter into cubes and add it to the dry ingredients. Using a pastry blender, combine butter with dry ingredients. Continue mixing until no chunks of butter are visible.

Fold wet ingredients into dry ingredients, then form the dough into a ball (I found the dough to be very sticky, so it might help to flour your hands). Pat out dough on a lightly floured surface and form it into a 1 inch thick rectangle that is roughly 9 inches long and 3 inches wide. Use a pizza cutter to slice the dough twice along the width, making 3 equal portions. Cut those 3 slices diagonally.

Bake for 14-16 minutes on a baking sheet lined with parchment paper. Scones should begin to turn light brown.

While scones cool, prepare glaze by mixing in a medium bowl. Mix until smooth. When scones are cool, use a brush to paint a coating of glaze over each scone.

While glaze firms up, prepare spiced icing by mixing ingredients in a medium bowl (I used the same bowl from the glaze). Drizzle the thicker icing over the scones and allow the icing to dry before serving (at least 1 hour).

Makes 6-9 scones, depending on how you slice the dough.

This was my first attempt at making scones, and these are so good! I'm not sure if I've ever had an original Starbucks pumpkin scones, so I can't say how close these are. If they're anything close to these, then they must be good. Next time I might add a bit more pumpkin, but other than that these will be a great breakfast treat.

I am so sorry that I haven't posted recently. My wonderful clients are keeping me so busy that I haven't had a spare minute! I'm not sure what is going on with this weather today, it's cold and rainy here, but I guess it's not uncommon to see unpredictable weather in April!

Isn't it the perfect day for a nice hot, soothing cup of tea? I'm working today, but you can bet that I'll have a nice cup of tea on my desk.

Vanilla Chai Recipe

Vanilla might not be part of a traditional version of chai, but its not an addition you want to miss. It helps to mellow out the spiciness of the tea.

Ingredients:

4 cups water
3 allspice, whole
5 cloves, whole
1 cinnamon stick
1 vanilla bean (1-inch)
1/3 cup honey
1 tbs loose black tea leaves

Preparation:

In a saucepan, heat water along with all the spices. Bring to a lower simmer, and let steep for about 5 minutes. Add tea leaves, and continue to steep for another 5 minutes. Strain out the tea, and stir in honey. Serve hot.

Shooner American Redware

Greg Shooner and his wife Mary Spellmire-Shooner are perhaps the finest redware potters in this country. They are known for reproducing Museum pieces, and of course their own work, in such detail that museums across the country can't tell the difference between the original and the Shooner's redware until they turn the piece over where Greg clearly signs and dates each piece! Redware itself is a pottery that carries a history of the past; originally made for kitchenware; it is now collected just for it's beauty. As with potters of old, Greg and Mary use an authentic lead glaze on their wares so it is never for food use. But oh! what treasures they turn out!!

At any given time, we always have at least 2 dozen pieces available. What an opportunity to add to, or start, a collection of Shooner redware!

Zesty BBQ Chicken Pizza - Delicous!

A topping of spicy barbeque sauce, diced chicken, cilantro, peppers, and onion all covered with cheese, and baked to bubbly goodness!

My family loved this pizza. I added pineapple chunks a few minutes before the pizza was finished baking and it was just the final touch that the pizza needed. Yummmm!

Yields One Pizza - Please visit allrecipes for nutritional information and ratings.

1 (12 inch) pre-baked pizza crust
1 cup spicy barbeque sauce
2 skinless boneless chicken breast halves, cooked and cubed
1/2 cup chopped fresh cilantro
1 cup sliced pepperoncini peppers
1 cup chopped red onion
2 cups shredded Colby-Monterey Jack cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).
Place pizza crust on a medium baking sheet. Spread the crust with barbeque sauce. Top with chicken, cilantro, pepperoncini peppers, onion, and cheese.
Bake in the preheated oven for 15 minutes, or until cheese is melted and bubbly.

Chocolate Cream Cheese Brownies

Chocolate Cream Cheese Brownies

2 pkg. (3 oz. each) cream cheese
5 tbsp. butter
1/3 c. sugar
2 eggs
2 tbsp. flour
3/4 tsp. vanilla
1 pkg. family size brownie mix
1/4 c. chopped nuts

FROSTING:

3 tbsp. butter
2 tbsp. cocoa
1 1/2 c. 10X sugar
2 tbsp. milk
1 tsp. vanilla

Soften cream cheese and butter; beat together until creamy. Add sugar, eggs, flour and vanilla; beat until smooth. Set aside.Prepare cake-like brownies as directed on package. Pour half the brownie mixture into a greased 13 x 9 inch pan. Pour cream cheese mixture over brownie mixture. Spoon remaining brownie batter over the top. Swirl 2 mixtures with a knife for a marbled effect. bake at 350 degrees for 35-40 minutes or until done. Cool and frost.
Frosting: Melt butter in medium saucepan. Stir in cocoa until dissolved. Add 10X sugar, milk and vanilla. Stir until smooth. (More milk may be added if necessary.) Frost brownies. Set aside until firm.

Double chocolate and mint - oh my!

Double Chocolate-Mint Brownies, submitted by Amy Gitter, Fond du Lac, WI

1 c. all-purpose flour
1 c. sugar
1 c. plus 6 T. butter, softened and divided
4 eggs
16-oz. can chocolate syrup
2 c. powdered sugar
1 T. water
1/2 t. mint extract
3 drops green food coloring
1 c. chocolate chips

Beat flour, sugar, 1/2 cup butter, eggs and syrup in a large mixing bowl until smooth; pour into a greased 13"x9" baking pan. Bake at 350 degrees for 25 to 30 minutes or until top springs back when lightly touched; cool completely in the pan. Combine powdered sugar and 1/2 cup butter, water, mint extract and food coloring in a mixing bowl; beat until smooth. Spread over brownie; chill. Melt chocolate chips and 6 tablespoons of butter in a double boiler; stir until smooth. Pour over chilled mint layer; cover and chill again. Cut into small squares to serve. Makes 4 to 5 dozen.

Hello everyone. I am finally able to post again. We were hit by a huge snow storm last Friday night and we have been without internet, phone and cable since Sunday. We counted ourselves fortunate though, there are still folks in our area with no power at all. Burrrrrrrr. I woke up to more snow this morning and it's been snowing all day. I cannot wait for Spring! Although I love having my daughter home from school, I have really had it with all of this snow! I'm sure there are many of you who feel the same way.

If you want to grow your own celery, leek, or onion transplants, February is the time to start them because these slow growers need several months before they are ready to set out.

You also should take a walk around the garden to check for ice and snow damage to shrubs, evergreens, and trees. Look for damage by rabbits and rodents, too. Install hardware cloth around stems to protect against further damage.

February is a great time to think about the birds. In addition to keeping the feeders full, you can attract them to your yard and garden next spring by building nor purchasing a birdhouse now.

Create A Unique Country Lamp Out of Any Bottle

While visiting one of my client-friend at Gingerbread Junction Country Store in Oakdale, PA, I noticed shop owner Marleen Danzinger's display of unique lamps that were created from bottles. I have seen mason jar lamps created with a kit, but never bottles created from an Olive Oil Bottle, an old maple syrup bottle and A Tequilla Bottle. Chili Beef Express - Perfect for a chilly winter day

Did you know that January is National Soup month? Although January is almost over, the winter chill certainly isn't and what taste better than a hot hearty bowl of chili on a chilly winter day?

1 pound 95% lean ground beef
1/4 teaspoon salt
1/4 teaspoon pepper
1 (15 1/2-ounce) can chili beans in chili sauce, undrained
1 (14 1/2-ounce) can chili-style chunky tomatoes, undrained
1 cup frozen corn
2 tablespoons chopped fresh cilantro
Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into 3/4-inch crumbles. Pour off drippings; season with salt and pepper.
Stir in beans, tomatoes and corn; bring to a boil. Reduce heat; cover and simmer 10 minutes. Sprinkle with cilantro before serving.

Chocolate Cherry Cream Scones from Gooseberry Patch!

Chocolate Cherry Cream Scones

2 c. all-purpose flour
1 T. baking powder
1/2 t. salt
1/4 c. sugar
1/4 c. mini semi-sweet chocolate chips
1/2 c. dried cherries, chopped
1-1/4 c. whipping cream
Garnish: additional cream, coarse sugar
(Recipe from 101 Christmas Recipes)

Combine flour, baking powder, salt and sugar in a bowl; whisk to blend well. Add chocolate chips and cherries. Stir dry ingredients while pouring in cream, continuing to stir until a soft, sticky dough is formed. Turn out onto a lightly floured surface and knead 8 to 10 times. Pat dough into a circle 1/2-inch to 3/4-inch thick; cut into 8 wedges. Place wedges one inch apart on a parchment paper-lined baking sheet. Brush with cream; sprinkle generously with coarse sugar. Bake at 425 degrees until golden and springy to the touch, about 15 minutes. Makes 8.

My daughter and I created a digital frame for my Mom for Christmas and we had the opportunity to go through and entire box of vintage photos. That was so much fun! I'm sure most of you have boxes or photo books filled with old memories. If you have the chance, sit down and go through them. It brings back a lot of memories and it is quite enjoyable.

Is there anything more wonderful this time of year than covering up under your favorite quilt? I don't know about you, but I use mine and I love them. Whether yours is one that was made by your own hands, a family member or friend, or is purchased, they all require the proper care. I thought that an article on the proper way to wash a quilt would come in handy. Thanks to Quilting101.

How to Wash a Quilt

There are almost as many opinions on how to wash quilts as there are quilters, as every person seems to have their own opinion on the subject!
Some people claim that vacuuming a quilt is the only way while other people swear you should never use anything other than careful dry cleaning. At the other extreme there are people who say to just throw the quilt in the washing machine along with the socks!
In this article we shall explore the different effects of washing a quilt and hopefully help you reach your own conclusion on the topic.

When you wash a quilt, first consider the fabric!

There are several factors you should consider before washing your quilt for the first time. By far the most important of this is to consider the type of fabric that the quilt is made of.
Traditionally most quilts are made of 100% cotton or of cotton mixes that are very close to 100% cotton. Check first to see what type of material the fabric, thread and batting in your quilt is made of.
Cotton is preferred in quilt making because it is a natural fibre that is soft and subtle yet also quite hardy. It is also available in a large variety of patterns and colors which makes it ideal for quilt making. Cotton is also the most popular material of choice used to make clothing.
When you consider how much dirt gets on the clothes that we wear on a daily basis and how we don't think twice about throwing them in a washing machine or dryer, it seems crazy that we are overly concerned about washing a quilt that is made of the same materials!
Having said that, there are a few simple things that you can do to help preserve a quilt during washing, as clothes change with the fashions, but quilts are usually kept forever.

Wash your quilt before you make it!

This advice sounds silly but is extremely important! As you would probably already be aware, when you wash a new piece of clothing for the first time that has deep or bright colors, you would normally wash it by itself without anything else in the machine.
Washing new clothing by itself is prudent as quite often the colors in new fabric tend to run - I'm sure most people have made the mistake of putting a red piece of clothing in with the white wash at some stage and ended up with a pile of pink clothing!
Similarly, it is very important to wash the fabric you want to use to make your quilt before you start to use it! Washing the fabric before you use it is a good idea because it tends to stretch the material into its natural "worn" shape. Washing also gives the chance for any excess dye pigments to be released early, rather than after it is made when it can end up ruining the white parts of your quilt!

What detergent should I use to wash my quilt?

Most washing machine and detergent manufacturers these days assume that customers have minimal knowledge of proper way to wash clothes. Hence they tend to design their products such that they will inflict minimal damage to fabrics, even with regular use.
While most detergents are quite harmless to cotton (provided the directions are followed!), some of the additives that are found in certain makes of detergent can be harmful to the fabric if used regularly.
You should always use an unscented, liquid based, color-free detergent to wash your quilt, and refrain from using any detergent that contains a fabric softener. Fabric softeners and the scents and dyes in regular detergents can damage the fibres in the fabric and so should be avoided.
Whatever you do, never use bleach on your quilt! This will certainly ruin the color and will also damage the fibres in the fabric.

The best way to wash a quilt

If it is a quilt bought from a shop then you should first check to see if there are washing instructions on the packet or on a label attached to the quilt and follow those directions closely. For hand-made quilts then there will be no tag and hence the following instructions will work in most cases.
For regular quilts with 100% cotton based fabrics, the following process is a reliable way to get a safe clean wash:

Fill the washing machine with warm water (never hot!) and while you wait read the instructions on the detergent bottle to work out how much detergent you need to use.
Add the detergent to the washing machine while the water is filling up, but before you put the quilt in the machine!
Stir the water to ensure that the detergent is fully dissolved and there are no parts of pure detergent that could get stuck on the fabric.
Put the quilt in the machine and select a regular warm/cold water wash cycle.
Once the wash cycle is complete, put the machine on again for a regular cold/cold water wash cycle, but this time don't add any detergent. This makes double sure that there are no traces of detergent left that may otherwise damage the strands of the fabric.

Once you have finished washing your quilt you will need to dry it. For most well-made quilts with good quality fabric it is usually safe to just throw the quilt in the tumble drier on a regular hot cycle like you would with your clothes.
If the quilt is made with particularly delicate material then you may be more comfortable drying it naturally in the air. Make sure you are careful to avoid direct sunlight however as this can fade the colors in the fabric of the quilt. Never wring out a quilt as this places unnecessary strain on the fabric and may cause permanent creasing.

Hand washing a quilt

Hand washing is also an option for particularly sensitive quilts or for fabrics that are not cotton based. It is best to use a large bath-tub to do this, making sure that the detergent is fully dissolved first and then stirring the quilt gently with your hands. Be aware that hand washing a quilt can be a lot of hard work, so unless you really feel strongly about it you might be better off just using the machine!
Remember again, if you are making your own quilts, try to choose cotton fabrics or fabrics made of pure cotton or with a high cotton percentage. Choosing the right fabric to begin with will help preserve the longevity of the quilt. You will also be happier about using it on a daily basis. When you are comfortable with washing your quilt you will have the peace of mind that you can keep it clean and in good condition for years to come!

My Holiday Tradition - The Oglebay Festival of Lights

Every family has tradition, and most family traditions center around Christmas time. My family is no different. Every year, when it starts getting cold, one thing I look forward to is going to the Oglebay Festival of Lights. We have been going since I can remember, and I still love them every year.

The nation’s largest light show is a six-mile drive and a magical experience. The drive begins at gingerbread booths and tunnels of falling snowflakes. Many amazing displays, children and fairy tales, traditional holiday symbols, and everything you could imagine lay in the 125 acres.

My favorites are Willard the Snowman, named after Willard Scott who first threw the switch in 1986 and the large Cinderella display. A horse drawn carriage racing to a large castle, complete with a clock tower was one of my favorites since I was little. My mom loves the animated deer in the woods and the sixty foot Poinsetta Wreath while my dad like

We made a game of trying to find the new display each time we go. This year, the new displays will be made with LED lights and they will begin to convert the older displays to LED. The new

I am a confessed chocoholic and I was definitely in my happy place when I found No Pudge Fudge at our local Kroger's. Just fat free yogurt added to the brownie mix and you have mouth-watering, guilt-free
chocolate brownies! No kidding! I don't kid about chocolate!

They make a great gift. Last year I made up a little gift basket for a friend. Now she wants the same thing this year, but our local Kroger's is no longer carrying No Pudge. Panic!

To straighten taper candles that have lost their shape.

Preheat oven to 250 degrees....place empty cookie sheet in preheated oven for 3-5 mins....remove cookie sheet from oven & place on flat surface....immediately start gently rolling candle back & forth on cookie sheet until straightened....works awesome!

Berry Good Wild Rice Recipe from Gooseberry Patch's new Quick & Easy Cookbook

Enjoy this recipe from Quick Easy Family Favorites Cookbook
1-1/2 c. wild rice, uncooked
2 14 oz. cans vegetable broth
4-1/2 oz. can sliced mushrooms, drained
4 green onions, sliced
1 T. butter, melted
1/2 t. salt
1/4 t. pepper
1/2 c. slivered almonds
1/3 c. sweetened dried cranberries

Mix first 7 ingredients in a 3-quart slow cooker. Cover and cook on low setting 5 hours or until rice is tender. Stir in almonds and cranberries. Cover and cook on low setting 15 more minutes. If all liquid is not absorbed, serve rice with a slotted spoon. Makes 7 cups.
